The story of Em begins with the story of our Chef, Ly Nguyen. Chef Ly grew up on the outskirts of an idyllic small town in Khanh Hoa, Vietnam, about 50 miles north of the Nha Trang. Raised on a farm where jungle, mountains, rivers, and the ocean met, young Ly adored her family’s fruit trees and delighted in dining on the bounty of the sea. Food was great. My service, not so much. My waiter Jimmy was not very pleased when I walked in (granted it was 30mins before closing... but also, like, it’s soup). I wasn’t even granted the luxury of being led to my seat, instead he pointed to a seat near the window where I could sit and then met me saying “you need to order now.” Maybe 2 mins after I ordered, a gentleman came in, was pleasantly greeted and seated with a pat on the back… Again, the food was great, and when it came time to situate my leftovers, Jimmy did bag ... read more
