Had a phenomenal meal last night. Pristine oysters, tender and tasty calamari, brocollini as tender as can be, grilled yellow zucchini, crispy artichokes, skinny fries, Peruvian chicken, tomato tartar . . . all world-class in taste, ingredients, presentation, and portions. the desert was beyond amazing. Of course our bartender, Charles, was stellar!
Five stars. The head chef Eduardo turned our evening into an unforgettable experience. His culinary skills are superb. He delighted us with a variety of extraordinary appetizers that truly enhanced the night. I will never forget the experience and will definitely return.
Chicken with gnocchi and beans had an unbelievably delicious flavor. Wedge salad, fresh crispy and the Gorgonzola dressing had just the right amount of cheese and tangyness. The shoestring fries perfectly crispy and the selection of dips for were delicious. The Chihuly sculpture is a sight to be seen.

Vermillion's atmosphere benefits greatly by its unique location overlooking the tall gallery above two connected commercial and residential towers. The dining and bar area (where we sat) merge unassumingly into the beautiful internal architecture of the buildings. The effect made for a relaxing yet regal dining experience. The Dining Out Tasting Menu was both delicious and filling. We especially enjoyed the tuna tartare and chocolate cake. The staff were incredibly friendly and helpful.
