We took the Roux class on 1/18/25 with Chef Raymond, and we had a blast. I learned sooooo much and Chef was kind, encouraging and patient with all of us. I truly feel like I can make Shrimp Etouffee and Gumbo now that I'm' home. I don't like super spicy foods, and Chef adjusted the heat level for me. It was still very flavorful without burning up your taste buds. Some other students added hot sauce to their individual servings. I highly recommend this class.

We visited the Mardi Gras School of Cooking in December 2024 and had the pleasure of learning from Chef Erika, who was absolutely wonderful and incredibly knowledgeable. From the moment we arrived until our departure, she was thorough, engaging, and even entertaining! All the food we prepared with her skilled guidance was absolutely delicious, and we learned so much along the way. This is truly the ultimate cooking class. Chef Erica is a gifted teacher and chef and is able to simplify the complexities of these recipes. The time flew by! I am a trained cook and have been cooking my whole life, and yet Chef Erica dazzled me with new tips and techniques that have elevated my cooking skills. A better, higher quality experience cannot be had! Well worth the price!

This was the best cooking class we have ever attended! It was an absolute honor to learn from such a talented and fabulous chef. After spending a week in New Orleans and sampling the city’s amazing restaurants and food options, we both agreed that this was our favorite meal—a true testament to the quality and creativity of the experience. Highly recommend this class to anyone visiting NOLA. It’s a must-do for food lovers!

I attended Chef Raymond’s Brunch Class and it was fantastic. We began with “Pig Candy” so we had snacks during the class. (Candied bacon with brown sugar and chopped pecans). Chef had wonderful stories, information and tips to elevate the dishes. Perfect grits for Shrimp and Grits, efficient way to peel and clean shrimp, and seasoning magic were addressed. Conference in New Orleans and my friend and I decided to do the Roux class with Chef Erika. It was the highlight of our trip. We had an amazing 3 hours. Cooking and also the rich history of NOLA was discussed. The food was delicious and now we have new skills. Well worth the cost of this class. And when I visit again I will return for another class. Thank you Chef Erika
