definite highlight of our family trip to New Orleans with our there teenagers. We've already tried our hand at the recipes here at home. Highly recommend.
My girlfriend and I thoroughly enjoyed the roux cooking class at The Mardi Gras School of Cooking. The space is well appointed, clean, and Chef Mark Falgoust was knowledable, fun, and personable. The hands on class with four was entertaining and included history, cooking techniques, and local restaurant recommendations. The food was delicious. We made chicken and andouille sausage gumbo using a dark roux, shrimp étouffée using a peanut butter colored medium roux, and bananas foster. We highly recommend this class.
We spent our last evening taking a foundations class; our only regret was not booking on our first or second night in town so we could have done more classes or had known what good Creole food could really be like. Chef Mark gave us great cooking tips- from teaching how to hold the knife correctly, how to chop an onion without tears, to the correct ratios for the Creole Trinity. We had a blast, meet great people and the food was the best Creole we had all week if not ever. Will definitely be back on our next trip.
Chef Preston was great, fun and VERY organized. We made 3 full courses, all delicious. It was much better than any other cooking class I've taken - very interactive! My sister and I would go again!
We had a wonderful time with Chef David. He is extremely knowledgeable and talented. The food we made was spectacular, so much so that we couldn’t wait to get home and make another batch of jambalaya. Up next is the bread pudding and BBQ shrimp!!! Highly recommend taking a class here, you won’t regret it!!
This was the highlight of our trip to New Orleans. Very informative and fun, hands-on experience. Class size was small--just three couples and our instructor.
We had a wonderful experience with Chef Mark. We learned a lot and he was amazing with our son. Chef Mark was patient, kind and good spirited. We appreciated the dietary accommodation and everything was delicious! A highlight of our family trip.
Chef David made the class interesting and fun. He explained how things were really done in a kitchen and the food was spectacular. This hands on cooking class is a must do and we'll do it again when in NOLA.
Mark Falgoust was our chef for today. He was wonderful. Gave us tips, Cajun cooking techniques and wonderful stories. The creole class was amazing and the food outstanding. We are already planning to recreate the recipes. Thank you for a wonderful experience. We will definitely recommend this chef and this class to others.
